Chocolate and goast cheese ganache

This ganache recipe of chocolate goat and cheese is sweet and refreshing at the same time. I am sure this might come as a surprise, but this ganache is rather delicious hits both notes!

Ganache is popular as a basis for fillings or pralines and is usually made of chocolate and cream. In this recipe, I have added orange juice, honey and soft English goat cheese. An unusual combination, but it is rather delicious!

Ingredients for 8

  • 200 gr. of dark chocolate ( I used Madagascan)
  • 300 ml double cream
  • 40 gr. of honey
  • 200 gr. of soft English goat cheese ( Perroche)
  • 1,5 cup of orange juice
  • How to make it 

Put the chocolate, 100ml of the cream, honey, goat cheese and orange juice into a pan and let it melt. It is ready when the sauce has a nice shine to it, and let it cool down. 

In the meantime, whisk the 200 gr. of cream until it peaks. When the sauce has chilled down, spoon the whipped cream into the ganache. Put the ganache in the fridge until it is a bit more solid so you can make quenelles ( using 2 spoons). Alternatively, you can add it to small glasses or cups.

If you use glasses, you can pour a little bit of double cream on top of the ganache and garnish it with the orange peel and chocolate bits for a special effect.

Garnish the ganache with

Orange peel and chocolate crumbs ( run a peeler over the chocolate bar).
