My deep-fried duck egg recipe is a real MasterChef Creation. I’m sure you have been impressed over the years by the fine dishes the contestants of MasterChef have created. One of the most popular dishes seems to be duck egg in every shape and form, though the deep-fried version seems the most popular one. 

The other day I decided to throw a surprise dinner for my partner’s birthday, and I wondered what I should dish up that day. The choice wasn’t actually that difficult. He loves the old-time favourite ‘ham, eggs and chips, which is a bit alien for a Dutchie like me. Although it is a popular pub grub in England, we don’t add ham or eggs to our chips. 

Nothing straightforward with me, though, as there had to be a twist. So my twist was: Deep-fried duck egg on chilli tomato jam, with two kinds of ham and deep-fried avocado fritters (replacement for the chips). It was a hit with all the guests. Although it looks pretty impressive, it is not very difficult to make. 

The recipe 

Ingredients for 2

  • 2 medium-sized duck eggs
  • 1 ripe avocado ( not overripe)
  • 1 egg
  • a serving spoon grated parmesan
  • 2 serving spoons Panko breadcrumbs
  • 3 serving spoons homemade breadcrumbs
  • 1/2 teaspoon chilli powder
  • 2 slices of ham
  • 2 slices of prosciutto
  • 1 serving spoon of plain flour
  • 2 teaspoons of chilli jam
  • Pan with sunflower oil

How to make it

The duck egg

Soft boil the eggs either in an egg boiler or in a pan of water. Cool them down in a bowl with ice cubes and water. Set aside. Whisk the egg. Mix the parmesan and the Panko breadcrumbs.

When ready to serve, roll the egg through the flower, then through the egg and mixture of Panko and parmesan. Deep fry them in the oil, and make sure you turn them so they will brown on all sides.

The avocado fritters

Cut the fritters just before serving to avoid discolouring. Try to make nice regular shaped ones in the shape of a chip. Not too thick! Mix the breadcrumbs with the chilli powder.

Once ready to serve, preheat the oven so you and place the fritters on an oven tray to keep them warm. It is better to deep fry the avocado fritters first so you can concentrate on frying the duck eggs. Dip the fritters in the egg and then dust them with the breadcrumbs. They have to be nicely covered.

Whilst you are deep-frying the eggs, you can dress the plates. Add one teaspoon of the chilli jam in the middle of the plate and arrange the ham around it. Place the deep-fried egg on top of the jam and the fritters on the left side.

Variation

Leave the ham out if you want to make it vegetarian. Alternatively, you can serve it with a nice salad for a lunchtime meal.
