This preserved lemon humous is my twist on the regular one, and it has become our favourite at home. The preserved lemon gives it a delicious flavour. Perfect as a dip or with grilled meat. I love using preserved humous in salads and sauces. Stick it amongst the vegetables and the garlic of your roast chicken. After you have finished cooking, blend the sauce, and you’ll have a delicious sauce.
For this recipe of the persevered lemon humour, I have used the delicate pink Flamingo pea.
Which equipment to use
I prefer to use a small blender for this preserved lemon humous as you get a perfect smooth emulsion. Although you can find recipes of humous in Cookidoo for the Thermomix, due to the small quantity, you’ll end up with a rough humous. The best texture you get with a Nutribullet.

What are Flamingo peas?
The award-winning company Hodmedod’s are growing a new pea, a pink one! This lovely small, slightly pink pea has been aptly called the Flamingo Pea. They were offering everyone 400 packs to anyone who wanted a 500g pack of the Flamingo Peas to trial. They were completely free, but in return, they wanted feedback. That was an offer hard to resist and a nice challenge to create some tasty recipes.

- 250 cooked Flamingo peas
- prepare the Flamingo peas 7 hours before you start this recipe
- how to prepare Flamingo peas – instructions
- small preserved lemon ( approx. 50 gram)
- 1 tbs Tahini
- lemon juice of 1 lemon
- 1/2 ts salt
- 1/2 ts ground cumin
- ts olive oil
Instructions
- cut the preserved lemon into pieces and remove the pits
- put all the ingredients in a blender and mix until smooth
- garnish with lemon rind
- although you can eat the humous straight away, the flavour is much better when it is chilled
Notes
You can use white beans if you don’t have Flamingo peas.
