I don’t have much of a sweet tooth, but I love a pick me up mid-morning with my espresso or with my cup of herbal tea later in the day. Pure chocolate is always high on my list. These delicious no-bake Carrot Balls are very easy to make. I tend to make them in a batch and freeze them, so I am never without these tasty snacks!
Perfect for a packed lunch too.
- 50 gr walnuts
- 50 gr pecan nuts
- 85 gr raisins
- 1/2 ts cinnamon
- 1/4 ts ginger powder
- A pinch of nutmeg
- A pinch of salt
- 60 gr grated carrot
- 1/4 zest of orange
- Desiccated coconut for decoration
You can grate your carrot in the ThermoMix for 3 seconds on speed 7, but I use the leftover carrot from my morning juice.
- To enhance the flavour you can slightly toast the walnuts and peacan nuts.
- Add the nuts and the raisins to the bowl of the ThermoMix and blitz them for 6 seconds on speed 7. If you make a larger quantity you need to do it for longer and use speed 10.
- Add the cinnamon, ginger, nutmeg, the grated carrot and the zest of orange. Blitz for 10 seconds on speed 3.
Add the mixture to a bowl and cool for 1 hour. You don’t need to do this, but it makes it easier to make nice balls. Roll the carrot balls through the desiccated coconut.
If you want to freeze them, then it is best to put them on a tray. Put them in the freezer for 30 minutes and transfer them to a bag.
Don’t have a ThermoMix? You can use a kitchen machine too, but you will need to grate the carrots.
