Preserved lemon humous with Flamingo peas

This twist on the regular humous has become our favourite at home. The preserved lemon gives it a delicious flavour. Perfect as a dip or with grilled meat.




  • 250 cooked Flamingo peas
  • prepare the Flamingo peas 7 hours before you start this recipe 
  • how to prepare Flamingo peas –  instructions
  • small preserved lemon ( approx. 50 gram)
  • 1 tbs Tahini
  • lemon juice of 1 lemon
  • 1/2 ts salt
  • 1/2 ts ground cumin
  • ts olive oil


  • cut the preserved lemon into pieces and remove the pits
  • put all the ingredients in a blender and mix until smooth
  • garnish with lemon rind
  • although you can eat the humous straight away, the flavour is much better when it is chilled


You can use white beans if you don’t have Flamingo peas.
